JOB SUMMARY BANQUET CHEF:

The Banquet Chef will manage all aspects pertaining to the banquet kitchen in servicing all events at the resort property including weddings, rehearsal dinners, private dining events and social events.

Responsibilities:

  • Plan, oversee and assist in day-to-day culinary operations of the banquet kitchen as it pertains to banquets.
  • Assigns (in detail) preparation and specific duties lists to banquet kitchen staff for efficient execution of events.
  • Prepare all menu items as per Banquet Event Order (BEO).
  • Oversee and help with production and execution of menu items.
  • Monitor the receipt, storage, and rotation of food products (to comply with health department regulations), including coverage, labeling, dating and placing items in proper containers.
  • Supervise and inspect daily cleaning procedures of kitchen, walk-in refrigerators and freezers.
  • Assist with training and supervising the kitchen staff.
  • Maintain effective communications with Executive Chef and Chef de Cuisine.
  • Maintain consistent communication with banquet cooks: function times, preparations, breaks and necessary progress in production.
  • Communicate with the Banquet Managers and Event Coordinators.
  • Facilitate the professionalism of our banquet team by adhering to proper language, uniforms, hygiene, and employee relations.
  • Leads the Banquet Kitchen Team in food preparation and presentation during all events.
  • May assist with other kitchen duties as needed

EDUCATION & SKILLS:

  • High school diploma, GED or equivalent/ Culinary certification or degree preferred.
  • Excellent time management skills and ability to prioritize tasks in a fast-paced setting
  • Strong communication and active listening skills required
  • Advanced cooking skills, including knife skills, cooking techniques, and food handling.
  • Knowledge of food safety and sanitation practices.
  • Ability to follow recipes and instructions accurately.
  • Strong time management and organizational skills.
  • Ability to work independently and efficiently under pressure.
