Using carefully-sourced ingredients from France (Flour & Butter) and making everything from scratch, Le Petit Four is committed to producing the highest quality baked goods. Full Job Description:

\n


\n

In this role, you will learn from our lead baker, you will be taught french baking techniques from our team, and how to work in a traditional French Bakery.

\n


\n

From 3am - 6am: You will be traying up and baking a variety of croissant, brioches and specialty viennoiseries as well as finishing up the prep of items.

\n


\n

From 6am - 11am: You are expected to be versatile during that part of your shift, you need to be able to help the Viennoiserie and Bread department depending on what is most needed.

\n


\n

On bread and viennoiserie, you are expected to be good at mixing (bread and flour), shape and scale. These techniques will also be taught to you, but we expect hard work and someone that wants to learn how to make great products.

We need you to have:

  • A desire to help where needed and work as part of a team!

  • Possess a passion for Baking with a keen eye for freshness, quality and cleanliness

  • Have flexibility to work a variety of shifts, including weekends, holidays.

  • Have minimum 1 year of experience successfully working in a fast-paced kitchen

Summary of Production Baker’ Primary Responsibilities:

\n


\n

    \n
  • Follow prep lists created by the chefs
  • \n

  • Label and stock all cooking ingredients
  • \n

  • Complete all tasks, in order, on the prep list from the Lead Baker or other kitchen managers.
  • \n

  • Tray up croissants, viennoiserie, breads, and other baked goods
  • \n

  • Proof croissants and bakery products properly
  • \n

  • Bake croissants, pastries, breads, and other products according to standards
  • \n

  • Follow baking times, temperatures, and production instructions
  • \n

  • Monitor product quality, color, proofing, and consistency
  • \n

  • Keep the bake-off area clean, organized, and sanitary
  • \n

  • Measuring quantities of creams and other ingredients.
  • \n

  • Adhere to all relevant nutrition and sanitary regulations and standards
  • \n

  • Keeping track of ingredient inventory and collaborating with other kitchen and management staff to order resupply
  • \n

  • Learn about the cooking methods and techniques employed in the kitchen
  • \n

  • Ensuring all food items are properly stored and easily accessible
  • \n

  • Supervising food and cooling room temperatures
  • \n

  • Maintaining a clean, orderly, and sanitized kitchen
  • \n

  • Assisting chefs in preparing food and attending to any culinary tasks that arise
  • \n

  • Other duties as assigned
